Christmas decorations are still everywhere! I wish they would just keep them the way it is a little longer~

I just love the Christmas mood! hmmmm ~ ^^

If you're still in the mood for baking Christmas cookies, there's something in for you! ^^ Well, if you're not, you still still bake them for other occasions!




Just in time to learn how to make them Gingerbread man for Christmas, I was lucky to be invited to the baking class by the Butterfly Project and At 19Culinary!



One of the reason I like baking classes is that they really have good recipes! Guaranteed to turn out delicious. The other sneaky reason is because all of the ingredients and utensils are all prepared! So I can happily just follow the instructions and bake my cookie! (and I also don't have to do the clean up after that) Haha..

So.. what's the recipe for Holiday Special - Gingerbread Family and Friends? They shall be revealed now~

Ingredients for Gingerbread;
- Unsalted butter (115g, chilled and diced)
- Brown sugar (175g)
- Egg (1gradeA)
- Black Treacle (2tbsp)
- Plain Flour (350g)
- Ground Ginger (1tsp)
- Bicarbonate Soda (1tsp)
- Vanilla Essence (1tsp)

Ingredients for Royal Icing on Gingerbread man;
- Icing Sugar (250g)
- Egg White (1/2 nos)
- Lemon Juice (1/2 tsp
- Glycerin (1/2 tsp)

Ingredients for Decoration on Gingerbread man;
- Gummies (30g)
- Silver Dragees (10g)
- Candies/ Chocolate Buttons (40g)

Instructions on how to make your Gingerbread man;
1. Preheat the oven to 180ÂșC. Grease three baking sheets
2. Mix flour, bicarbonate soda, ginger and diced butter till resemble fine breadcrumbs. Add sugar, egg, black treacle and form a dough,
3. Turn out on to a floured surface and knead until smooth. Shape into a ball, wrap in clear film (plastic wrap) and chill for 10 minutes.
4. Roll out the dough thinly and cut using people shaped cutters.
5. Bake cookies for about 12 - 15 minutes or until pale golden.
6. To make royal icing, beat the egg white with lemon juice and glycerin, gently add in icing sugar, batch till you get a soft thick paste.
7. Decorate your gingerbread with candies, chocolate buttons, and royal icing. Let it set and your Gingerbread man is complete!

e.g. use Anchor brand cold non-salted butter . use all purpose flour . brown sugar for caramel taste . Grade A eggs . Break eggs separately to avoid adding in a faulty egg . Use Treacle for some dark colour n flavouring . Preheat oven to 175 or 180 degree . cookie will be done when it turns slightly brown at the side. oven cover can only be open after half baking time . as for chiffon cakes, never open the oven at all! . after cookie is baked, it will still be a little soft. hence need some time to cool and harden.
